Cornbread Muffin Recipe

Can't you smell it already, that strong aroma of southern cooking. Now you can enjoy it right in your own home thanks to your grain mill, mixer and this wonderful Cornbread Muffin Recipe. It really is simple. And it doesn't take long.

  • 4 eggs
  • 1 cup sugar
  • 1 cup butter
  • 1 can cream corn
  • 1/2 cup Cheddar Cheese (grated)
  • 1/2 cup Monterey Jack Cheese (grated)
  • 1 cup freshly ground cornmeal**
  • 1 cup white flour
  • 1 can chopped green
    chilies (4 ounces)
  • 4 tsp. baking powder
  • 1/4 tsp. salt

*Don't forget to preheat your oven to 350° Fahrenheit*

First you will want to take the eggs, sugar and butter and cream them together in a mixer like the Bosch Universal, or the DLX Mixer. Then you need to add all the other remaining ingredients until the batter is mixed well. After it is all mixed together pour the mixed cornbread muffin recipe into some greased muffin pans or a 9x12 baking pan.

At this time you need to reduce the heat to 300° Fahrenheit and then bake for 40-60 minutes or until done.

**As noted in the ingredients list, this cornbread muffin recipe calls for 1 cup of freshly ground cornmeal. This means you will need to grind at least 2/3 cup of popcorn kernels to make 1 cup of cornmeal. To do this you need to take your grain mill and if it is an electric mill, grind it on the coarse setting. If you own a hand grain mill you will need to space your stones apart so that when you grind the popcorn it produces a cornmeal that is the consistency of sand.
